Braaied Snoek


  • 2 Red Peppers
  • 60ml Olive Oil
  • 1 Onion
  • 2 Cloves Garlic, Crushed
  • 1 Can All Gold Chopped Tomatoes
  • 1 Red Chillies
  • 20 ml Paprika
  • Salt and Freshly Ground Black Pepper to Taste
  • 1 Whole Snoek
  • Fresh Basil
  • Apricot Butter
  • 65G Butter
  • 65ml All Gold Smooth Apricot Jam
  • 2 Cloves Garlic, Crushed

To serve

  • 125ml finely chopped coriander
  • 250ml pitted black olives



1. Brush the red peppers with half of the olive oil, place on a baking tray and grill in hot oven.
2. Heat remaining olive oil in a frying pan and sauté onions and garlic until transparent, add red peppers and tomatoes, season with paprika, salt and pepper. Lower heat and cook for 20 minutes until it forms a thick gravy, stir in basil , set aside and keep warm.
3. Place Snoek on a working surface, season with salt and freshly ground black pepper.
